Rocky Road

A delicious chocolate treat fully loaded with whatever fillings you like. My faves include marshmallows, biscuits, lollies and glacé cherries.

Ingredients

  • 500 grams good quality chocolate Note 1
  • 40 ml neutral oil canola, vegetable, sunflower
  • 150 grams marshmallows sliced in half
  • 100 grams Arnott's scotch fingers broken up
  • 200 grams various lollies sliced into smaller pieces

Instructions

  • Prepare your rocky road fillings by breaking them up into smaller pieces and placing them into a bowl.
  • Line a container or tray with baking paper, this will make it much easier to remove from the tray once the chocolate has set.
  • Break up the chocolate into a large heat safe bowl such a PYREX bowl and add the oil.
  • Fill a medium sized pot 1/3 of the way with water, place on a high heat and bring it to a boil. Place the bowl on to the pot so that the bottom of the bowl sits in the pot. The heat will gradually melt the chocolate, ensure to mix regularly. Once the chocolate is fully melted, remove the bowl and allow to cool for a few minutes.   • Add in your favourite types of fillings and mix everything to combine.
  • Pour the mixture into a container or tray and refrigerate for at least 3 hours or until everything is cool and the chocolate is solid/set.
  • Remove the rocky road from the fridge 20 minutes before slicing, and use a sharp knife to cut it into smaller pieces. Note 3

Note 1
Add whatever you want into the chocolate, it doesn't have to be what I've listed above. You can use different types chocolate, nuts, add fruit or other types of lollies and biscuits, you can add anything.
Note 2
I prefer to melt the chocolate using the double boiler method; it's easier to keep an eye on it. If you don't want to use this method of melting chocolate, melt it in the microwave. The chocolate will still need to be broken into smaller pieces and add in the oil. Place in the microwave, melt the chocolate in 30 second bursts, mixing in between each round. Make sure to keep an eye on it so it doesn't burn or explode.
Note 3
Removing the rocky road from the fridge and leaving it sit outside the fridge for 10-15 minutes helps stop it from cracking when it's time to slice it up, as the rocky road will be rock hard from sitting in the fridge. If you're still having trouble slicing it, run your knife under hot water.
Storage
Place sliced pieces into an airtight container and leave in a cool place or the fridge. If it lasts longer than a few days, place any leftovers in an airtight container and then into the fridge.
