Rocky Road

Rocky Road is the ultimate sweet treat for those who love a little bit of everything in every bite. With a handful of ingredients and no baking needed, it’s the kind of treat that feels effortless yet indulgent. With its smooth chocolate base and whatever mix-ins you fancy, this classic treat is easy to whip up and guaranteed to satisfy those sweet cravings.

Chocolate

The base for rocky road is chocolate and oil. You need good quality chocolate, I love using Whittaker’s chocolate. It’s a chocolate brand from New Zealand and it’s the best quality chocolate available in Australia, expensive, but the best. Lindt chocolate when on sale, is a good choice, Lindt has to be up there with Whitaker’s as one of my favourite chocolate brands. Cadbury would be my next choice for chocolate, it still tastes alright; it regularly goes on sale, so three of the 180g blocks will do for this recipe. As for the oil, use a neutral oil, it helps prevent cracking and keep it neutral like canola or vegetable oil so the taste doesn’t impart on the chocolate.

Fillings

I wanted to add marshmallows as a requirement for the base but I don’t add coconut to my rocky road and I have a feeling that someone will come after at me for leaving it out. I know coconut is up there with marshmallows as one of the classic additions and I do like coconut, I just don’t like it in rocky road; I prefer a smoother textured chocolate. Rocky road additions can be anything, you add marshmallows and coconut, leave either or out, or leave them both out entirely.

Here are some ideas of my other favourite fillings

Nuts – macadamia, almonds or peanuts are my favourite. I like making one with nuts and one nut free.

Cadbury Snack chocolate block – the Cadbury snack is a large chocolate block with pieces of chocolate that are filled with 6 different flavours scattered throughout the block. I like breaking off the individual pieces and mixing them through the rocky road. It add some surprise.

Biscuits: Oreos – double stuff Oreos are my favourite, nothing else compares; Scotch fingers – Out of all of Arnott’s plain biscuits, Scotch fingers are the best and most elite biscuit.

Lollies – my favourite range is Allen’s lollies especially pineapples, milk bottles and snakes. The best flavoured snake is pineapple, the yellow one but I usually buy killer pythons because I like a bit of everything.

Glacé cherries – I’m a sucker for sugar syrup cherries, if I’m not careful, I will eat a whole bag in one go and not regret it.

The great thing about rocky road is its versatility, you can mix in whatever you want.

My Best Tips

Melting chocolate: My favourite way to melt chocolate to place the bowl over a pot of boiling water, this is a double boiler without the second pot. It allows steam from the boiling water to gently melt the chocolate. It takes longer, however, I get to keep an eye on the chocolate so it doesn’t burn. If you want to melt your chocolate in the microwave, do it in 30 second bursts and be sure to mix in between each one. Keep an eye on it!

Use kitchen scissors cut up the marshmallows and other lollies into smaller pieces. It’s much easier than slicing everything with a knife.

Storage – leave the sliced pieces in an airtight container or in the fridge if it’s hot. It should last a few days in the container. If there’s anything left, place the container into the freezer.

Rocky Road

A delicious chocolate treat fully loaded with whatever fillings you like. My faves include marshmallows, biscuits, lollies and glacé cherries.

Ingredients

  • 500 grams good quality chocolate Note 1
  • 40 ml neutral oil canola, vegetable, sunflower
  • 150 grams marshmallows sliced in half
  • 100 grams Arnott's scotch fingers broken up
  • 200 grams various lollies sliced into smaller pieces

Instructions

  • Prepare your rocky road fillings by breaking them up into smaller pieces and placing them into a bowl.
  • Line a container or tray with baking paper, this will make it much easier to remove from the tray once the chocolate has set.
  • Break up the chocolate into a large heat safe bowl such a PYREX bowl and add the oil.
  • Fill a medium sized pot 1/3 of the way with water, place on a high heat and bring it to a boil. Place the bowl on to the pot so that the bottom of the bowl sits in the pot. The heat will gradually melt the chocolate, ensure to mix regularly. Once the chocolate is fully melted, remove the bowl and allow to cool for a few minutes. You can melt chocolate in the microwave: Note 2
  • Add in your favourite types of fillings and mix everything to combine.
  • Pour the mixture into a container or tray and refrigerate for at least 3 hours or until everything is cool and the chocolate is solid/set.
  • Remove the rocky road from the fridge 20 minutes before slicing, and use a sharp knife to cut it into smaller pieces. Note 3

Note 1
Add whatever you want into the chocolate, it doesn’t have to be what I’ve listed above. You can use different types chocolate, nuts, add fruit or other types of lollies and biscuits, you can add anything.
Note 2
I prefer to melt the chocolate using the double boiler method; it’s easier to keep an eye on it. If you don’t want to use this method of melting chocolate, melt it in the microwave. The chocolate will still need to be broken into smaller pieces and add in the oil. Place in the microwave, melt the chocolate in 30 second bursts, mixing in between each round. Make sure to keep an eye on it so it doesn’t burn or explode.
Note 3
Removing the rocky road from the fridge and leaving it sit outside the fridge for 10-15 minutes helps stop it from cracking when it’s time to slice it up, as the rocky road will be rock hard from sitting in the fridge. If you’re still having trouble slicing it, run your knife under hot water.
Storage
Place sliced pieces into an airtight container and leave in a cool place or the fridge. If it lasts longer than a few days, place any leftovers in an airtight container and then into the fridge.
