Easy Sausage Rolls
Sausage rolls are a timeless favourite, perfect for parties, picnics, or just a quick, satisfying snack. This easy sausage rolls recipe simplifies the process by using store bought sausages without the fuss of seasoning your filling. By removing the sausage meat from its casing, you get all the flavour without the hassle. Perfect for any occasion when you need a quick, crowd-pleasing snack or an easy appetiser.

This easy sausage roll recipe came about from my doom-scrolling escapades online. I’m on social media so much I can’t remember whether I saw it on TikTok, Instagram or Facebook. I thought it was such a great idea for a party appetiser or when someone asks you to bring a plate to a get together and you need to quickly whip something up. As much as I love a good traditional sausages roll, sometimes you need something that’s convenient, fast to make and really tasty.

What type of sausages can I use?
Grab some thick sausages from the supermarket or butcher. They’re big enough that it should fit two across half a sheet of pastry. My go-to flavours are from my local Aldi, beef with roasted garlic and chicken with parsley and fetta. Any flavour will do if you want to make something special, otherwise plain beef sausages is a great all-rounder to please anyone.
Can I add other things to these easy sausage rolls?
You can but it’ll depend on what it is.
- No need to add any more salt and pepper to the sausage, they’re seasoned enough with salt.
- Grated up veggies could well with sausages, such as carrot or zucchini, if you want to add some hidden veggies for the kids.
- If you buy plain pork sausages and like the taste of fennel, add some in.
- Cheese is a good option for some extra cheesy goodness added to your sausage rolls.
- If you add in any of the above, make sure to remove the casing, mix your additions into the sausage mince, and continue the recipe as usual.
- You may want to spread some sauce or relish on the pastry before adding the sausages, such as sweet chilli sauce, tomato and pepper relish, or mustard.
- Sprinkle on some black and white sesame seeds on top before baking if you want to make them look a little bit fancier.
Frozen or chilled ready rolled puff pastry?
Ready to roll, chilled pastry is more widely available in other countries such as the United States but it’s not that popular in Australia. I’ve seen it here and there, but it’s not readily available, and it’s expensive compared to frozen puff pastry. Buy and use what is the best option for you.
Can these be prepared in advance?
They sure can, it can be prepared the day before baking. Follow steps two through five, place them in a parchment paper lined container spaced apart, place parchment between each level if they need to be stacked. Once frozen puff pastry has defrosted, it may become harder to handle, as they can stick together if they’re touching, making your job harder once you’re ready to bake. Make sure the container is airtight to ensure freshness.
My Best Tips
Egg wash – if you don’t have an egg or don’t want to use one, swap it for milk.
Slice into whatever size you want. It can be sliced in two for large sausage rolls or four pieces for bite sized appetisers. Easiest way to slice them into smaller pieces is to cut it in half and then in half again. Saves you guestimating where to cut and they’ll all remain similar sizes.
Use a sharp knife to slice down the length of the sausage from end to end. This will make it easier to pull off the casing. Just be careful with the knife!
Easy Sausage Rolls
Ingredients
- 2 x 500g packets of flavoured sausages roughly 6 thick sausages per pack – Note 1
- 1 egg scrambled – Note 2
- 3 sheets of puff pastry
- Sauce for Serving
Instructions
- Pre heat your oven to 180 degrees Celsius.
- Defrost 3 sheets of puff pastry.
- On a cutting board, slice the pastry in half and add brush scrambled egg or milk across the opposite side of where the sausage will be placed.
- Cut the links of the sausages and then gently slice down the length of the sausage to cut into the casing so it can be removed. Repeat with each sausage. Note 3
- Place the sausage mince across the puff pastry sheet, along its edge and roll the pastry across to the other side to encase the sausages and slice into pieces.
- Place them on a baking tray lined with baking paper, brush them with the scrambled egg or milk and bake them for 20-25 minutes or until the pasty is a golden brown.
- Remove from the oven, allow to cool for a few minutes and serve with your favourite sauces.

Notes
The sausages I purchase have six to a pack. Two sausages fit across the puff pastry so if you use two packets of six sausages, you’ll need three sheets of puff pastry. The amount of puff pastry needed will depend on the size of the sausages and how many of them are used. Note 2

If you want to mix in any additions, now will be a good time to do it. You can mix in cheese, veggie or other spices like fennel into the mince and continue with the recipe as usual.
